Who produces Mash Potato Squash?

Mash Potato Squash is produced by Sligo Farm. Sligo Farm is a third-generation, family-owned farm located in Lincoln County, Tennessee. The farm consisted of 65 acres with about 40 acres devoted to growing a wide variety of fresh vegetables and plants, fruits, berries, melons, flowers, and herbs. Our farm was established in 1987 by Randy and Kathy McElroy. Originally, Sligo Farm was a cattle farm and was gradually converted to a produce farm. A major expansion occurred in 2016 when Justin and Joshua McElroy joined the farming operations and Randy retired from his engineering job at Redstone Arsenal. We utilize the latest regenerative farming techniques available along with the old “tried and true” techniques by working closely with the USDA, the Lincoln and Madison County Extension Offices, and the University of Tennessee’s Agriculture Department. Sligo Farm sells directly to the public at Alabama Farmers Markets such as The Madison County Farmers Market, The Market at MidCity, Bailey Cove Farmers Market, and others. We also sell online at the Huntsville Food and Farm Hub and in future Sligo Farm plans to open an online store. This marketing strategy allows Sligo Farm to sell fresh, locally grown produce, herbs, and flowers to the public at the lowest possible price.
